Spices may come in many forms: fresh, fully dried or pre-ground and dried. Usually, spices are dried. For convenience, spices may be ground into a powder. Whole dried spices have the longest shelf life, so they can be purchased and stored in large quantities, making them cheaper per serving. Fresh spices, such as ginger, are usually more flavorful than their dried form, but fresh spices are more expensive and have a shorter shelf life. Some spices are not always fresh or whole, such as turmeric, which must usually be purchased in ground form. Small seeds, such as fennel and mustard seeds, are often used in whole and powdered form.
